Vegetable preserves: a gluten-free option for coeliac and anti-inflammatory diets

Our artichokes are an excellent choice for any meal. As well as being versatile and delicious, artichokes are rich in fibre, antioxidants and vitamins.

Roasted peppers, on the other hand, are not only a delight to the palate, but also an incredible source of vitamin C and antioxidants. Their unique texture and flavour make them an indispensable ingredient in many recipes.

We could not forget our preserved broad beans, which are, without a doubt, a true traditional delicacy. Rich in protein and fibre, they are an excellent complement to a balanced, gluten-free diet.

All of these preserves are perfect for inclusion in the diets of people with coeliac disease, as well as for those seeking to reduce their gluten intake for health or wellness reasons, such as FODMAP diets, diets for people suffering from Irritable Bowel Syndrome; people diagnosed with SIBO (Small Intestinal Bacterial Overgrowth) or IMO (Intestinal Methanogenic Overgrowth), which are becoming more and more widespread in the population.

Beyond the world of coeliacs: the gluten-free trend

In recent years, the demand for gluten-free products has grown exponentially, not only among coeliacs, but also among those seeking a healthier, anti-inflammatory diet.

While it is true that gluten consumption is associated with increased inflammation, gastrointestinal problems and weight gain, those who do not have coeliac disease or who do not suffer from gastrointestinal problems should not radically eliminate its consumption.

Such decisions should always be supported and supervised by a nutritionist, as some foods labelled as “gluten-free” may have less fibre, iron and vitamins than those with gluten. However, preserved vegetables, as mentioned above, are a natural source of fibre and vitamins. In addition, they are practical and have a long shelf life and can be stored for long periods of time without losing their properties.
